Donna Hay is an amazing chef that writes recipes that barely ever fail. She is one of my favourite chefs and I always use her cook books, if I want to cook but don't know what to cook there is always something of hers that sparks my attention.

Birthday Cake Experimenting!

Tried attempting the melting ice-cream on top of a cake. Went reasonably well and tasted amazing, although next time I would use Candy Melts for the melting part rather than Ice Magic as it would stand out more as I would use another colour and it would set better.

EASY NACHOS!

Great yummy and VERY EASY snack! Grab some Dorito Chips, top with grated cheese and salsa, place in the oven until the cheese is melted and golden. Serve with avocado and sour cream. ENJOY:) So simple you can bake them blind!!!:)

Ceramic Beads

What are they and when are they used?
Ceramic Beads are used in cooking when Blind Baking. They act as a weight to hold the pastry down to prevent it from rising. The pastry is cooked containing the beads before removing them to add the filling. You can purchase them from most cooking stores for around $20. 
If unavailable uncooked rice can be used as a substitute.

So what is Blind Baking???

Define - Blind Bake 

Baking blind  (pre-baking) is the process of baking a pie crust or other pastry without the filling. Blind baking is a process undertaken before filling the pastry with (pudding or cream pies). It is neccassary so the filling of the pie doesn't over cook and the crust over cooks. It also prevents the crust from becoming soggy from the pie's filling. 

The crust is filled with Ceramic Beads or Uncooked Rice to stop the pastry from rising.

I'll keep you all up to date with what I'm up to in the kitchen, with family favourites and even some interesting experiences and challenges I've given a go. There will be weekly meals and savoury snacks but don't worry I definitely have a sweet tooth so there will be plenty of desserts, cakes, biscuits and everything else you can think of.
